ERTH (an Arabic word meaning heritage, culture, and tradition passed down through generations) is an initiative launched by Savante Tala Saket, merging culinary craftsmanship with sensory fluency to create stimulating experiences centred around Extra Virgin Olive Oil. ERTH is the lens through which place, culture and emotion are captured.

Its first event, ‘The Many Facets of Olive Oil’, was launched in Amman, Jordan, on 18 April 2026.  A model that is built on the progressive sensory structure of olive oil moving from flavour recognition and oil identification to culinary application and transformation.  Participants were guided through the Savantes inspired ‘Alphabet of Aroma’ to sharpen aroma description, then profiling of three extra virgin olive oils (from Spain, Jordan, and Tunisia), and testing the flavour impact of the oils with a series of dishes of Jordanian cuisine, created from local seasonal ingredients.

The atmosphere of the event was fun and convivial, creating an enhanced learning environment building on participants’ shared knowledge and adding the new dimensions offered by high quality extra virgin olive oils.

 

The Shams El Balad Restaurant in Amman, Jordan, provided an excellent venue for the convivial event.

The event was led by a collaboration between Tala Saket and Chef Qais Malhas at Shams El Balad Restaurant in Amman Jordan. It was the first programme in Jordan under the ‘The Aegis of International Extra Virgin Olive Oil Savantes’, an initiative designed to encourage members of the Savantes Register to create and deliver events globally which support the ethos of the movement.

Future activities of ERTH include developing local flavour descriptions for olive oil consistent with Levant cuisine, offering bespoke versions of the first event which can be presented at celebrations, conferences, exhibitions, and promotions in a wide range of venues, regionally and globally.
